Delight in these 4 Ingredient Date Caramels, a naturally sweet and creamy treat combining the rich flavors of medjool dates, almond butter, and a smooth chocolate coating. Perfect for a healthy snack or a guilt-free dessert, these caramels are easy to make and fully vegan, gluten-free, and refined sugar-free.

Ingredients

Scale

Date Caramel

  • 1 cup packed medjool dates, pitted
  • 2 tablespoons creamy almond butter (or any nut/seed butter)
  • 1 tablespoon coconut oil, melted

Chocolate Coating

  • 1 cup chocolate chips, or an 8-ounce chocolate bar
  • 2 teaspoons coconut oil, melted

Instructions

  1. Soak Dates: Soak the medjool dates in a bowl of very hot water for 10 minutes to soften them, which helps create a smooth caramel texture.
  2. Blend Caramel: Drain the softened dates and transfer them to a food processor or high-speed blender. Add the almond butter and melted coconut oil, then pulse until the mixture is completely smooth and creamy.
  3. Freeze Caramel: Line a 9×5-inch loaf pan with parchment paper, transfer the date caramel into the pan, and spread evenly. Place the pan in the freezer for 2-3 hours, or until the caramel is firm to the touch.
  4. Slice Caramels: Remove the firm caramel from the freezer and lift it out of the pan using the parchment paper. Place on a cutting board and slice into 12 small, equal-sized squares.
  5. Melt Chocolate: In a heat-safe bowl, melt the chocolate chips and 2 teaspoons of coconut oil together either in the microwave or over a double boiler until smooth.
  6. Coat Caramels: Dip each date caramel square fully into the melted chocolate, then lift it out carefully and place on a parchment-lined plate. Repeat with all pieces.
  7. Set Chocolate: Transfer the chocolate-coated caramels to the fridge for at least 1 hour until the chocolate hardens and completely sets.
  8. Enjoy or Store: Once set, enjoy your chocolate-covered date caramels immediately or store them in the fridge for later indulgence.

Notes

  • For nut-free option, substitute almond butter with sunflower seed butter or tahini.
  • Use dark chocolate or dairy-free chocolate chips to keep the recipe vegan.
  • If dates are dry, soak them longer for a smoother caramel.
  • Store caramels in an airtight container in the fridge for up to 1 week.
  • To make smaller or larger pieces, adjust the slicing accordingly.
