Ingredients

  • 1 package small wonton wrappers
  • 1 package ground chicken or 4 chicken breasts, ground
  • 1 large package fresh spinach, cooked down with a little salted water and chopped
  • 1 onion, chopped
  • 1 cup feta cheese
  • 2 cups mozzarella cheese
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon Cavander’s Greek seasoning
  • Salt and pepper, to taste
  • Frying oil (enough for 1 inch depth, heated to 350°F)

Instructions

  1. Step 1: Heat about 1 inch of oil in a skillet or Dutch oven to 350°F. In a separate skillet, cook the ground chicken and chopped onions together, seasoning with salt and pepper. Drain any excess fat once cooked.
  2. Step 2: In a bowl, combine the cooked chicken and onion mixture with the chopped cooked spinach, feta, mozzarella, Greek seasoning, and adjust salt and pepper to taste.
  3. Step 3: Lay a wonton wrapper in front of you so it looks like a diamond. Place about 1 tablespoon of the filling in the center of the wrapper.
  4. Step 4: Fold the side tips of the wrapper over the filling, then fold the bottom tip up and over the sides. Brush a little egg wash on the top corner’s edge, then roll upward to seal completely. Make sure all edges are tightly closed.
  5. Step 5: Carefully fry the rolls in the hot oil until golden brown and crispy on both sides, about 5 minutes total. Remove and drain on paper towels.
  6. Step 6: Serve warm, ideally alongside a creamy feta dressing for dipping.

Tips & Variations

  • Substitute ground turkey or beef for chicken if preferred.
  • Use fresh herbs like dill or oregano in the filling for extra Greek flavor.
  • Try baking the rolls at 375°F for 15–20 minutes for a healthier alternative.
  • If you don’t have Cavander’s Greek seasoning, use a mix of oregano, garlic powder, and thyme.

Storage

Store any leftover rolls in an airtight container in the refrigerator for up to 3 days. Reheat in an oven at 350°F for 8–10 minutes or in a toaster oven to retain crispiness. Avoid microwaving as it can make the wrapper soggy.

Filling Ingredients

  • 1 package ground chicken (or 4 chicken breasts ground)
  • 1 large package fresh spinach, cooked down and chopped
  • 1 onion, chopped
  • 1 teaspoon Cavander’s Greek seasoning
  • Salt and pepper, to taste
  • 1 cup feta cheese
  • 2 cups mozzarella cheese

Wrapper and Coating

  • 1 package small wonton wrappers
  • 1 egg, beaten (for egg wash)

Cooking Oil

  • Vegetable oil or frying oil, enough for deep frying about 1 inch deep

Instructions

  1. Prepare the oil and chicken: Heat about 1 inch of frying oil in a skillet or Dutch oven to 350°F (175°C). In a separate skillet, cook the ground chicken and chopped onions over medium heat until fully cooked. Season with salt and pepper, then drain any excess fat.
  2. Combine filling ingredients: In a large bowl, mix the cooked chicken and onions with the chopped spinach, Greek seasoning, feta, and mozzarella cheese. Taste and adjust the salt and pepper seasoning as needed.
  3. Assemble the rolls: Lay one wonton wrapper flat in a diamond shape. Spoon about 1 tablespoon of the chicken and spinach mixture into the center. Fold the left and right corners over the filling, then fold the bottom corner up. Dab a bit of the beaten egg on the top corner to act as glue, then roll tightly upward to seal the roll completely.
  4. Fry the rolls: Carefully place the rolls seam side down in the hot oil. Fry for about 2-3 minutes per side until golden brown and crispy, approximately 5 minutes total. Remove and drain on paper towels to remove excess oil.
  5. Serve: Serve the Greek chicken and spinach rolls warm, alongside a creamy feta dressing if desired.

Notes

  • Ensure the oil temperature remains steady at 350°F for perfect frying results.
  • Use fresh spinach and cook it just until wilted to avoid excess moisture in the filling.
  • Seal the rolls well with egg wash to prevent them from opening during frying.
  • Drain the cooked rolls well on paper towels to keep them crispy.
  • These rolls can be baked as a healthier alternative by brushing them with oil and baking at 375°F for 15-20 minutes until golden.
