Instructions

  1. Prep the dry ingredients: Preheat your oven to 425°F. In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, salt, and all the spices (cinnamon, nutmeg, ginger, cardamom, cloves) until thoroughly combined.
  2. Cut in butter and apples: Using a pastry cutter, fork, or your hands, cut the cold butter and grated apple into the dry mixture until coarse crumbs form. The texture should be such that if you grab a fistful, it sticks together well.
  3. Add the buttermilk: Gently fold in the chilled buttermilk with a rubber spatula until the dough just comes together. It will be sticky and a bit wet; this is expected.
  4. Prepare the work surface: Flour a clean surface generously and keep extra flour nearby for dusting your hands and dough regularly to prevent sticking.
  5. Incorporate dry bits: Sprinkle some flour over the dough in the bowl to help manage the stickiness. Scrape and mix to incorporate any dry flour from the bottom of the bowl.
  6. Knead the dough: Turn the dough onto the floured surface, flour your hands, and knead gently several times until it becomes easier to handle.
  7. Shape and fold the dough: Pat the dough into an oblong oval about one inch thick. Fold the short ends towards the center like an envelope, press the dough down, then expand it back into an oval shape. Repeat this folding process seven times to develop layers.

  9. Bake the biscuits: Bake at 425°F for 20 minutes until golden brown and cooked through.
  10. Prepare the honey butter glaze: While the biscuits are baking, melt the butter in a medium saucepan over medium heat. Stir in the honey and a pinch of salt until smooth and combined.
