Dressing
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 garlic clove, minced

Salad
- 1 (14 oz) can artichoke hearts in water, quartered
- 1 (14 oz) can white beans, rinsed and drained (recommend Bush’s)
- 1/2 small red onion, diced
- 1 celery stalk, thinly sliced
- 1 tablespoon fresh oregano, chopped
- Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, and red pepper flakes. Season with salt and pepper to taste. Let the dressing stand for 20-30 minutes to allow the flavors to meld.
- Combine the salad ingredients: In a large bowl, add the quartered artichoke hearts, rinsed and drained white beans, diced red onion, thinly sliced celery, and chopped fresh oregano.
- Toss with dressing: Pour the prepared dressing over the salad ingredients and toss gently to coat everything evenly.
- Chill and serve: If preparing ahead, cover and refrigerate the salad for up to 24 hours. Remove from the refrigerator at least 30 minutes before serving to bring flavors to room temperature.
