Ingredients

Scale

Dry Ingredients

  • 2 cups (250g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

Wet Ingredients

  • 2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp)
  • 2 large eggs
  • ½ cup (120ml) milk
  • ¼ cup (60g) unsalted butter, melted
  • 1 tsp vanilla extract

Glaze

  • 1 cup (120g) powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg ensuring the spices and leavening agents are evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, whisk the eggs, milk, melted unsalted butter, and vanilla extract until the mixture is smooth and well blended.
  4. Make the Batter: Gently fold the dry ingredients into the wet ingredients just until combined, then carefully stir in the diced apples to evenly distribute without overmixing, to keep the fritters tender.
  5. Shape & Bake: Using a spoon, drop heaping spoonfuls of batter onto the prepared baking sheet, spaced apart to allow for expansion. Bake in the preheated oven for 15 to 18 minutes, or until the fritters are golden brown and a toothpick inserted comes out clean.
  6. Prepare the Glaze: While the fritters bake, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until the glaze is smooth and free of lumps.
  7. Glaze & Serve: Allow the baked fritters to cool slightly on a wire rack. Drizzle the vanilla glaze over the warm fritters before serving to enjoy the perfect blend of sweet and spicy flavors.

Notes

  • Use tart apple varieties like Granny Smith or Honeycrisp for the best flavor and texture.
  • Do not overmix the batter to keep the fritters light and tender.
  • Serving warm enhances the flavor and texture of the glaze and fritters.
  • You can store leftovers in an airtight container for up to 2 days and reheat before serving.
  • For a dairy-free option, substitute milk with almond or oat milk and use dairy-free butter.
