Ingredients

Scale

Salmon Meatballs

  • 1 lb salmon fillet, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg, lightly beaten
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for baking)

Avocado Sauce

  • 1 ripe avocado
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prep Oven: Preheat your oven to 375°F (190°C). Grease a baking sheet with a little olive oil or nonstick spray to prevent sticking.
  2. Mix Meatballs: In a large mixing bowl, combine the finely chopped salmon, breadcrumbs, beaten egg, fresh parsley, garlic powder, paprika, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Form & Bake: Shape the salmon mixture into small meatballs, about the size of a tablespoon each. Arrange them evenly on the prepared baking sheet. Drizzle the meatballs with olive oil. Bake in the preheated oven for 12-15 minutes or until they are firm and reach an internal temperature of 145°F (63°C).
  4. Make Sauce: While the meatballs are baking, prepare the avocado sauce. Blend together the ripe avocado, sour cream, lemon juice, minced garlic, salt, and pepper until the mixture is smooth and creamy.
  5. Serve: Serve the warm salmon meatballs topped with a generous drizzle of the tangy avocado sauce. Garnish with extra fresh parsley if desired for color and freshness.

Notes

  • Ensure salmon is finely chopped for better meatball texture; alternatively, pulse in a food processor in short bursts.
  • Baking instead of frying reduces fat content making the dish healthier.
  • Adjust seasoning in the avocado sauce to your taste; add more lemon juice for extra tang.
  • These meatballs can be prepared in advance and baked just before serving for convenience.
  • Serve with a side salad or steamed vegetables for a complete meal.
