Bang Bang Chicken Skewers are a deliciously spicy and creamy grilled chicken dish perfect for summer gatherings or quick weeknight dinners. Tender chunks of seasoned chicken are grilled to perfection on skewers and coated with a flavorful bang bang sauce made from mayonnaise, sriracha, honey, and vinegar, offering a perfect balance of heat, sweetness, and tang.

Ingredients

Scale

For the Chicken Skewers:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1 to 1.5-inch chunks
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 6 to 8 wooden or metal skewers
  • Optional: 1 bell pepper, cut into chunks
  • Optional: 1 small red onion, cut into chunks

For the Bang Bang Sauce:

  • 1/3 cup mayonnaise
  • 1 to 2 tablespoons sriracha or hot sauce (adjust to taste)
  • 1 tablespoon honey or sugar
  • 1 tablespoon rice vinegar or lime juice
  • Optional: 2 tablespoons Greek yogurt (to replace some mayonnaise for a lighter sauce)

Instructions

  1. Prep the chicken: Cut the chicken into 1 to 1.5-inch chunks. Pat the pieces dry with paper towels, then season them evenly with salt, pepper, garlic powder, and smoked paprika. Toss the seasoned chicken in olive oil to coat thoroughly and ensure moisture during grilling.
  2. Make the sauce: In a small bowl, combine mayonnaise, sriracha, honey, and rice vinegar or lime juice. Stir until the mixture is smooth and creamy. Taste and adjust the spiciness or sweetness to your preference. For a lighter sauce, add Greek yogurt in place of some mayonnaise.
  3. Assemble the skewers: Thread the chicken pieces onto skewers, alternating with colorful vegetables such as bell peppers and red onion if using, to add texture and flavor variety.
  4. Grill the chicken: Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally to ensure even cooking. Grill until chicken is fully cooked through and slightly charred on the edges.
  5. Add the sauce: During the last few minutes of grilling, brush the chicken skewers generously with the bang bang sauce to glaze them with flavor. Alternatively, you can drizzle the sauce over the skewers after removing them from the grill.
  6. Serve immediately: Garnish the skewers with chopped green onions or sesame seeds if desired. Serve with extra bang bang sauce on the side for dipping.

Notes

  • For best results, soak wooden skewers in water for at least 30 minutes before use to prevent burning on the grill.
  • Chicken thighs provide more flavor and juiciness than breasts but are slightly higher in fat.
  • The bang bang sauce can be adjusted for heat and sweetness to suit your taste.
  • Vegetables like bell peppers and red onions are optional but add great color and texture to the skewers.
  • Make sure chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
