  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, omit if you don’t like spice or add to taste at the end)
  • 4 cups low sodium beef broth
  • 2 cups water
  • 2 cups reginetti pasta or broken lasagna noodles (about 5 oz)

  • ¼ cup ricotta cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Heat Olive Oil and Brown Beef: In a large pot on the stove, heat 1 tablespoon of olive oil over medium-high heat for about 3 minutes. Add 1 lb ground beef and cook for about 10 minutes until browned, breaking it apart with a spoon.
  2. Sauté Onion and Garlic: Add ½ cup minced onion and 2 tablespoons minced garlic to the pot with the beef. Sauté for 2 to 3 minutes until the onions and garlic become translucent and fragrant.
  3. Add Tomatoes and Spices: Stir in 28 oz crushed tomatoes, 1 bay leaf, 1 teaspoon dried basil, 1 teaspoon dried parsley, 1 teaspoon dried oregano, ½ teaspoon black pepper, and optional ¼ teaspoon red pepper flakes. Then pour in 4 cups low sodium beef broth and 2 cups water. Stir to combine.
  4. Bring Soup to a Boil: Cover the pot and increase heat to bring the soup to a boil. Stir every few minutes to prevent sticking.
  5. Add Pasta and Simmer: Once boiling, add 2 cups reginetti pasta or broken lasagna noodles. Stir, reduce heat to medium, and cook uncovered for half the recommended pasta cooking time indicated on the package, stirring occasionally. The pasta should be slightly undercooked as it will continue cooking off the heat.
  6. Let Pasta Finish Cooking: Remove the pot from heat and let it sit uncovered for 5 minutes to allow the pasta to absorb more broth and finish cooking.
  7. Finish and Serve: Discard the bay leaf from the soup. Ladle the soup into bowls and top each with about ¼ cup ricotta cheese and ¼ cup grated Parmesan cheese if desired. Serve hot and enjoy!
