Ingredients

Scale

Oatmeal Base and Topping

  • 2 1/4 cups Old Fashioned rolled oats
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups brown sugar
  • 1 cup butter (2 sticks), melted
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Blueberry Filling

  • 3 cups blueberries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 1 tablespoon corn starch

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the correct temperature while you prepare the batter.
  2. Prepare Oatmeal Mixture: In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Melt the butter and pour it over the dry ingredients. Mix thoroughly until the mixture becomes crumbly and well incorporated.
  3. Form Base Layer: Reserve one-third of the oatmeal mixture for the topping. Press the remaining two-thirds evenly into the bottom of a 9×13 inch baking pan to form the crust.
  4. Make Blueberry Filling: In a separate bowl, combine the blueberries, granulated sugar, and corn starch. Gently mix until the blueberries are evenly coated with the sugar and corn starch mixture.
  5. Assemble Bars: Spread the blueberry mixture evenly over the prepared oatmeal crust. Then crumble the reserved one-third oatmeal mixture evenly over the blueberry layer as the topping.
  6. Bake: Place the assembled pan in the preheated oven and bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  7. Cool and Serve: Remove the pan from the oven and allow the bars to cool completely before slicing into squares for serving.

Notes

  • Use fresh or frozen blueberries; if using frozen, do not thaw to avoid excess moisture.
  • Press the crust firmly into the pan to ensure a sturdy base.
  • Allow bars to cool completely to help them set and hold together when cut.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars can be frozen for up to 2 months; thaw before serving.
