Oatmeal Base and Topping
- 2 1/4 cups Old Fashioned rolled oats
- 2 1/4 cups all-purpose flour
- 1 1/2 cups brown sugar
- 1 cup butter (2 sticks), melted
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
Blueberry Filling
- 3 cups blueberries (fresh or frozen)
- 1/4 cup granulated sugar
- 1 tablespoon corn starch
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the correct temperature while you prepare the batter.
- Prepare Oatmeal Mixture: In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Melt the butter and pour it over the dry ingredients. Mix thoroughly until the mixture becomes crumbly and well incorporated.
- Form Base Layer: Reserve one-third of the oatmeal mixture for the topping. Press the remaining two-thirds evenly into the bottom of a 9×13 inch baking pan to form the crust.
- Make Blueberry Filling: In a separate bowl, combine the blueberries, granulated sugar, and corn starch. Gently mix until the blueberries are evenly coated with the sugar and corn starch mixture.
- Assemble Bars: Spread the blueberry mixture evenly over the prepared oatmeal crust. Then crumble the reserved one-third oatmeal mixture evenly over the blueberry layer as the topping.
- Bake: Place the assembled pan in the preheated oven and bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
- Cool and Serve: Remove the pan from the oven and allow the bars to cool completely before slicing into squares for serving.
Notes
- Use fresh or frozen blueberries; if using frozen, do not thaw to avoid excess moisture.
- Press the crust firmly into the pan to ensure a sturdy base.
- Allow bars to cool completely to help them set and hold together when cut.
- Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- These bars can be frozen for up to 2 months; thaw before serving.
