Ingredients

Scale

For the Truffles

  • 2 1/3 cups chopped pecans (plus additional pecans for topping)
  • 8 graham crackers
  • 1 cup brown sugar
  • 1/3 cup corn syrup
  • 2 tablespoons maple syrup
  • 1/2 teaspoon salt
  • 2 tablespoons bourbon (or vanilla)

For the Chocolate Coating

  • 20 ounces dark chocolate chips (2 10-ounce bags)

Instructions

  1. Preheat and Toast Pecans: Preheat your oven to 350 degrees Fahrenheit. Spread the chopped pecans evenly on a baking sheet and toast them in the oven for 10 minutes. Once toasted, let them cool slightly.
  2. Process Graham Crackers: Place the graham crackers in a large food processor. Pulse until they resemble fine crumbs.
  3. Add Pecans to Processor: Add the toasted pecans to the food processor with the graham cracker crumbs. Pulse until the mixture reaches a fine crumb consistency.
  4. Add Sweeteners and Bourbon: Add the brown sugar, corn syrup, maple syrup, salt, and bourbon to the food processor. Pulse until all ingredients come together and form a sticky mixture.
  5. Combine Mixture: Transfer the mixture to a large bowl. Use your hands to thoroughly mix and ensure everything is well combined.
  6. Form Truffles: Using a cookie dough scoop or your hands, form the mixture into 2-tablespoon sized balls. Press them firmly together to hold their shape.
  7. Freeze Truffles: Place the formed truffles on a parchment-lined baking sheet and freeze for 20-30 minutes to firm up.
  8. Melt Chocolate: Place the dark chocolate chips in a microwave-safe bowl. Microwave on high for 1 minute, stir, then continue microwaving in 20-second intervals, stirring after each, until the chocolate is completely melted and smooth.
  9. Dip and Garnish: Dip each chilled truffle into the melted chocolate, ensuring it is fully coated. Immediately sprinkle with a teaspoon of chopped pecans on top.
  10. Set and Serve: Place the coated truffles back onto the parchment-lined baking sheet. Allow the chocolate to set completely at room temperature or in the refrigerator. Serve and enjoy!

Notes

  • For a non-alcoholic version, substitute bourbon with vanilla extract.
  • Ensure pecans are cooled before processing to prevent the mixture from becoming oily.
  • Chocolate can be tempered for a glossy finish, but it’s optional.
  • Store truffles in an airtight container in the refrigerator for up to one week.
  • Use a cookie dough scoop for uniform truffle sizes and easier shaping.
