Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.
  2. Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Season the diced chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Sauce: In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Add the halved cherry tomatoes and stir. Then add the Boursin cheese, stirring continuously until it melts and the sauce becomes smooth and creamy.
  4. Combine Ingredients: Return the cooked chicken to the skillet. Add the cooked pasta and spinach, and toss everything together to combine. If the sauce is too thick, gradually add the reserved pasta water a little at a time until you reach the desired consistency.
  5. Serve: Plate the pasta and chicken mixture. Garnish with freshly chopped parsley if desired, and serve warm to enjoy the full flavors of the dish.
