Instructions

  1. Prepare the chicken: Cut each chicken breast in half lengthwise, yielding 4 thinner pieces. Season each piece evenly with garlic powder, salt, and pepper to taste.
  2. Cook the chicken: Heat olive oil and butter in a skillet over medium-high heat. Once hot, add the chicken pieces and cook for approximately 5-6 minutes on each side, or until they are fully cooked through and have a nicely browned exterior. Remove the chicken and place it on a plate, reserving any juices.
  3. Sauté onions: In the same skillet, add chopped onions. Sauté for about 5 minutes until they are softened and lightly browned. If the pan is dry, add a small splash of olive oil to prevent sticking and promote even cooking.
  4. Make the sauce: Pour the chicken broth into the skillet with the onions. Add the softened Boursin cheese and stir thoroughly until the mixture forms a smooth, creamy sauce.   5. Reheat chicken in sauce: Return the cooked chicken pieces and any accumulated plate juices back to the skillet.
