These Buffalo Chicken Egg Rolls are a flavorful and crispy appetizer combining shredded rotisserie chicken with cream cheese, buffalo sauce, sharp cheddar, mozzarella, and ranch seasoning, all wrapped in egg roll wrappers and air fried to golden perfection.   • 2 cups (280 g) rotisserie chicken, finely diced
  • 4 ounces cream cheese, softened
  • ¼ cup buffalo sauce, plus extra for serving
  • 1 cup (113 g) sharp cheddar cheese, shredded
  • 1 cup (113 g) mozzarella cheese, shredded
  • 1 packet (1 ounce / 2 tablespoons) dry ranch seasoning mix

Assembly

  • 8 egg roll wrappers
  • Water, for assembly
  • Nonstick cooking spray

For Serving

  • Ranch dressing or blue cheese dressing

Instructions

  1. Mix Filling: In a large bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded sharp cheddar, shredded mozzarella, and dry ranch seasoning mix. Stir well until all ingredients are fully incorporated.
  2. Prepare Egg Rolls: Place one egg roll wrapper on a clean surface. Put about ⅓ cup of the chicken mixture in the center of the wrapper.
  3. Roll the Egg Rolls: Lightly wet the edges of the wrapper with water to help seal. Fold the bottom corner of the wrapper up over the filling, then fold in the left and right corners toward the center. Roll tightly until the filling is enclosed and the edges are sealed completely.
  4. Preheat Air Fryer: Set your air fryer to 400°F (204°C) and let it preheat while you finish assembling the egg rolls.
  5. Air Fry the Egg Rolls: Place the egg rolls in the air fryer basket in a single layer. Spray the tops lightly with nonstick cooking spray. Air fry for 3-4 minutes. Flip them over, spray again with cooking spray on top, and air fry for another 3-4 minutes or until golden brown and crispy.
  6. Serve: Remove the egg rolls from the air fryer and serve hot with ranch or blue cheese dressing and extra buffalo sauce if desired for dipping.

Notes

  • For extra crispiness, make sure to spray the egg rolls with cooking spray before and after flipping in the air fryer.
  • If your air fryer basket is small, cook the egg rolls in batches to avoid overcrowding which can prevent even cooking.
  • You can substitute any cooked shredded chicken if you don’t have rotisserie chicken.
