Ingredients

Scale

Lasagna and Chicken

  • 12 ounces lasagna noodles
  • 3 1/2 cups rotisserie chicken, shredded

Cheese Sauce

  • 24 ounces cream cheese, softened
  • 1 packet ranch seasoning
  • 1 cup buffalo sauce
  • 1/2 cup milk
  • 2 cups cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded

Optional Toppings

  • Ranch dressing
  • Green onions, sliced
  • Blue cheese crumbles

Instructions

  1. Mix Ingredients: In a large bowl, combine the softened cream cheese, ranch seasoning packet, buffalo sauce, milk, and half of the shredded cheddar and mozzarella cheeses. Mix until smooth and well blended to create the creamy buffalo cheese mixture.
  2. Layer Dish: Spread a portion of the cheese mixture evenly at the bottom of a baking dish. Arrange a layer of lasagna noodles over the cheese mixture, followed by another layer of the cheese mixture, and then a layer of shredded rotisserie chicken.
  3. Repeat Layers: Continue layering with noodles, cheese mixture, and chicken until all ingredients are used, ensuring to end with a final layer of the cheese mixture topped with the remaining shredded cheddar and mozzarella cheeses.
  4. Bake Covered: Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 45 minutes, allowing the flavors to meld and the cheeses to melt thoroughly.
  5. Bake Uncovered: Remove the foil and bake the lasagna uncovered for an additional 10 minutes to allow the cheese on top to brown and become bubbly.
  6. Rest Before Serving: Remove the lasagna from the oven and let it rest for 8-10 minutes to set before slicing and serving. Garnish with optional ranch dressing, sliced green onions, and blue cheese crumbles if desired.

Notes

  • Use rotisserie chicken for convenience and added flavor, or cook and shred your own chicken breasts.
  • You can substitute traditional lasagna noodles with whole wheat or gluten-free varieties to suit dietary needs.
  • Adjust the amount of buffalo sauce to control the spice level according to your preference.
  • Covering the dish while baking keeps the lasagna moist; uncovering at the end creates a nicely browned cheesy top.
  • Allow the lasagna to rest to make cutting easier and prevent it from falling apart.
