Shrimp and Rice Base

  • 1 lb large shrimp, peeled and deveined
  • 1 cup cooked white rice

Cheese and Sauce Mix

  • 1 ½ cups shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Topping

  • 2 tablespoons butter, melted
  • ½ cup breadcrumbs

Garnish

  • Fresh parsley, chopped (optional)

Instructions

  1. Prepare the Shrimp: Rinse the peeled and deveined shrimp and pat them dry to ready them for cooking.
  2. Cook the Shrimp: Heat a large skillet over medium heat and cook the shrimp for 2-3 minutes on each side until they turn pink and are fully cooked. Remove from heat and set aside.
  3. Mix the Sauce: In a large mixing bowl, combine sour cream, mayonnaise, lemon juice, garlic powder, onion powder, paprika, salt, and pepper. Stir thoroughly until the mixture is smooth and well blended.
  4. Add the Rice and Cheese: Fold the cooked white rice and shredded cheddar cheese into the sauce mixture, stirring until everything is evenly coated.
  5. Combine Shrimp with Rice Mixture: Gently stir the cooked shrimp into the rice and cheese mixture, ensuring an even distribution throughout.
  6. Transfer to Baking Dish: Grease a 9×13-inch baking dish and spread the shrimp and rice mixture evenly inside.
  7. Prepare the Topping: In a small bowl, mix melted butter with breadcrumbs. Sprinkle this mixture evenly over the top of the casserole.
  8. Bake: Preheat the oven to 350°F (175°C). Bake the casserole for 25-30 minutes, or until the top turns golden brown and the casserole is bubbling around the edges.
  9. Garnish and Serve: Remove the casserole from the oven and let it cool slightly. Garnish with freshly chopped parsley for color and flavor. Slice and serve hot, ideally with a crisp green salad or steamed vegetables.

Notes

  • Make sure shrimp are fully cooked but not overcooked to avoid rubbery texture.
  • You can substitute mayonnaise with Greek yogurt for a lighter alternative.
  • Use panko breadcrumbs for a crunchier topping if preferred.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, bake in the oven at 325°F (160°C) until warmed through.
