Crust
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold
- 1 large egg
Filling
- 1 (21 ounce) can cherry pie filling
Glaze
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2–3 tablespoons milk
- Preheat and Prepare Pan: Preheat the oven to 350°F. Grease a 9×13-inch baking pan and line it with parchment paper. Set aside.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, cornstarch, baking powder, and salt until well combined.
- Incorporate Butter: Add the cold unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to cut in or rub the butter until the mixture becomes crumbly.
- Add Egg and Form Dough: Crack in the large egg and mix until just combined. The dough should remain crumbly but will hold together when pressed.
- Press Dough and Bake Crust: Press about two-thirds of the dough evenly into the prepared baking pan. Bake for 8 minutes to set the crust partially.
- Add Cherry Filling: Remove the pan from the oven. Evenly spread the cherry pie filling over the pre-baked crust. Then, sprinkle the remaining dough crumbs evenly over the cherry layer.
- Bake Bars Fully: Return the pan to the oven and bake for 20-25 minutes, or until the top is golden brown and the filling is bubbly. Allow the bars to cool completely in the pan.
- Prepare and Drizzle Glaze: In a small bowl, whisk together powdered sugar, vanilla extract, almond extract, and 2-3 tablespoons milk until smooth and desired consistency is reached. Drizzle the glaze over the cooled cherry pie bars.
Notes
- Make sure the butter is cold to achieve a crumbly, tender crust texture.
- You can adjust the milk in the glaze to make it thicker or thinner depending on preference.
- For easier bar removal, use the parchment paper overhang to lift the bars from the pan.
- Store bars in an airtight container at room temperature for up to 3 days.
- These bars are delicious served with a scoop of vanilla ice cream.
