Ingredients

Scale

Crust

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold
  • 1 large egg

Filling

  • 1 (21 ounce) can cherry pie filling

Glaze

  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 23 tablespoons milk

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F. Grease a 9×13-inch baking pan and line it with parchment paper. Set aside.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, cornstarch, baking powder, and salt until well combined.
  3. Incorporate Butter: Add the cold unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to cut in or rub the butter until the mixture becomes crumbly.
  4. Add Egg and Form Dough: Crack in the large egg and mix until just combined. The dough should remain crumbly but will hold together when pressed.
  5. Press Dough and Bake Crust: Press about two-thirds of the dough evenly into the prepared baking pan. Bake for 8 minutes to set the crust partially.
  6. Add Cherry Filling: Remove the pan from the oven. Evenly spread the cherry pie filling over the pre-baked crust. Then, sprinkle the remaining dough crumbs evenly over the cherry layer.
  7. Bake Bars Fully: Return the pan to the oven and bake for 20-25 minutes, or until the top is golden brown and the filling is bubbly. Allow the bars to cool completely in the pan.
  8. Prepare and Drizzle Glaze: In a small bowl, whisk together powdered sugar, vanilla extract, almond extract, and 2-3 tablespoons milk until smooth and desired consistency is reached. Drizzle the glaze over the cooled cherry pie bars.

Notes

  • Make sure the butter is cold to achieve a crumbly, tender crust texture.
  • You can adjust the milk in the glaze to make it thicker or thinner depending on preference.
  • For easier bar removal, use the parchment paper overhang to lift the bars from the pan.
  • Store bars in an airtight container at room temperature for up to 3 days.
  • These bars are delicious served with a scoop of vanilla ice cream.
