Ingredients

Scale

Coffee Mixture

  • 2 teaspoons instant coffee crystals
  • 2 tablespoons milk

Cookie Dough

  • 3/4 cup butter, softened
  • 1 three ounce package of cream cheese, softened
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 tablespoons cocoa powder

For Dipping

  • 1/2 cup chocolate chips or chocolate chunks
  • 1 teaspoon coconut oil

Instructions

  1. Prepare Coffee Mixture: Combine the instant coffee crystals and milk in a small bowl. Stir until the coffee crystals dissolve completely. If the coffee doesn’t dissolve easily, warm the milk slightly before mixing. Set aside.
  2. Make Cookie Dough: In a large mixing bowl, cream together the softened butter and cream cheese until the mixture is smooth and well blended. Add the packed brown sugar, vanilla extract, and the prepared milk-coffee mixture to the butter-cream cheese blend. Stir well to combine. Gradually add the all-purpose flour and cocoa powder, stirring until the dough is well blended. Cover the dough and chill it in the refrigerator for one hour or until it is firm enough to handle easily.
  3. Shape Cookies: Preheat your oven to 350°F (175°C). Remove the dough from the refrigerator. Shape the dough into 1-inch oval shapes. Press a notch into the center of each cookie using a chopstick or a similar tool so that each cookie resembles a coffee bean.
  4. Arrange and Bake: Line baking sheets with parchment paper. Place the cookies about one inch apart on the sheets. Bake in the preheated oven for 9 to 11 minutes, or until the edges are firm and the bottoms of the cookies appear slightly darker.
  5. Cool Cookies: Once baked, transfer the cookies to a wire rack to cool completely. They can be enjoyed as is or dipped in chocolate for an extra indulgence.
  6. Prepare Chocolate Dip: In a small saucepan, melt together the chocolate chips and coconut oil over low heat until smooth. Dip each cooled cookie halfway or up to one-third in the melted chocolate, then place them on wax paper or freezer paper to set.
  7. Set Chocolate: To speed up the setting of the chocolate dip, place the dipped cookies in a cool area or refrigerate them until the chocolate hardens. Your Chocolate Coffee Cookies are now ready to enjoy. This recipe yields about 48 cookies.

Notes

  • Use room temperature butter and cream cheese for easy blending.
  • Make sure to chill the dough to firm it up for easier handling and shaping.
  • The notch in the cookies mimics the look of a coffee bean and adds to the charming presentation.
  • Half-dipping the cookies in chocolate not only adds flavor but also creates a beautiful contrast.
  • Store dipped cookies in an airtight container in the refrigerator for up to one week.
  • For a stronger coffee flavor, increase the instant coffee crystals up to 3 teaspoons.
