Instructions

  1. Prepare Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature to ensure they are soft and easy to work with.
  2. Combine Ingredients: Mix the cream cheese, butter, powdered sugar or erythritol, and instant coffee until completely smooth. Using a hand mixer is recommended for the smoothest consistency, but mixing by hand with a fork also works.
  3. Shape the Truffles: Spread the mixture into a container or place it in the freezer for a few minutes until firm enough to scoop. Use a mini cookie scoop to form balls and place them on a parchment-lined plate.
  4. Freeze the Truffles: Freeze the truffle balls until fully firm.
  5. Optional Chocolate Coating: Melt the chocolate chips and, if desired, stir in half a teaspoon of oil for a smoother sauce. Dip the frozen truffles into the melted chocolate and place them on parchment paper to set. For truffles like in the photos, cut them in half once the chocolate has set.
