Instructions

  2. Melt the Chocolate and Mix: Melt semisweet chocolate chips and the 1/4 cup chopped Andes mints by microwaving at 50% power in 30-second bursts, stirring after each burst until smooth. Pour this melted chocolate mixture into the cream cheese mixture and beat until thoroughly combined and smooth.
  3. Chill the Filling: Transfer the chocolate mixture onto plastic wrap and form it into a tight log shape. Refrigerate for 45 minutes to allow the mixture to firm up for shaping.
  4. Shape the Truffles: Once chilled, roll the firm mixture into one-inch balls. Place the balls onto a baking tray lined with parchment paper, spacing them to avoid sticking.
