Instructions

  1. Heat butter and soften onion: Heat the butter in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes, until the onion begins to soften and becomes translucent.
  2. Add and season chicken: Add the cut chicken pieces to the skillet. Sprinkle with Italian seasoning, pepper, and salt. Stir well to evenly coat the chicken with the seasonings.
  3. Cook chicken until golden: Cook and stir the chicken for 5 minutes, allowing it to brown and turn golden on all sides for enhanced flavor and texture.
  4. Add garlic: Add the minced garlic to the skillet and cook for one additional minute, stirring constantly to prevent burning and to release the garlic’s aroma.
  5. Add broth and rice: Pour in the chicken broth and add the long grain white rice to the skillet. Stir thoroughly to combine all ingredients evenly.
  6. Bring to boil and simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low.
  7. Cover and cook rice: Cover the skillet with a lid and let it simmer for 17-20 minutes until the rice is completely tender and has absorbed most of the liquid.
  8. Finish with cream and parmesan: Stir in the heavy cream and freshly grated Parmesan cheese until the mixture is creamy and well combined. Serve immediately.
