  • 1 (15.5 oz) can white beans, drained (about 1 1/2 cups)
  • 1 medium onion, about 1 cup diced
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 1 cup reserved pasta water
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh chopped parsley, for garnish

Instructions

  1. Cook Pasta: Cook your pasta according to the package directions in salted water. Reserve 1 cup of the cooking water before draining the pasta.
  2. Sauté Onion and Garlic: While the pasta cooks, peel and dice the onion and mince the garlic cloves. Sauté them over low heat in 3 tablespoons of olive oil, seasoning with a pinch of salt, black pepper, and red pepper flakes, until the onions become translucent and soft.
  3. Blend Sauce Ingredients: Add the sautéed onion and garlic, lemon juice, and the drained white beans to a blender along with 1/2 cup of the reserved pasta water. Blend until very smooth.
  4. Adjust Sauce Consistency: Add the remaining 1/2 cup of reserved pasta water to the blender and blend again until the sauce is creamy and smooth.
  5. Warm Sauce: Pour the blended white bean sauce back into the frying pan used for sautéing. Warm over low heat, adding salt and pepper to taste as needed.
  6. Combine Pasta and Sauce: Toss the cooked and drained pasta into the sauce, stirring well to coat each strand evenly.
  7. Garnish and Serve: Garnish the pasta with fresh chopped parsley and serve immediately while hot.
