Chickpea Crackers Ingredients

  • 400 g can chickpeas, rinsed and drained
  • 1 cup rolled oats
  • 2 cloves garlic, peeled
  • 1 tablespoon lemon juice
  • Salt, to taste
  • 1/4 cup olive oil

Instructions

  1. Prepare Chickpeas: Rinse and drain the canned chickpeas thoroughly to remove any liquid and reduce moisture for the dough.
  2. Blend Chickpeas: Place the chickpeas in a food processor and blend until the mixture is smooth and forms a playdough-like ball with a slightly sticky texture.
  3. Add Rolled Oats: Add the rolled oats to the processor and blend until the oats are finely chopped and integrated into the chickpea mixture.
  4. Season the Mixture: Add the garlic cloves, lemon juice, and salt to taste into the processor and begin blending to combine all flavors.
  5. Add Olive Oil: Gradually drizzle the olive oil while blitzing continuously until the mixture comes together as a cohesive dough ball.
  6. Flatten the Dough: Line a baking tray with baking paper and place the dough on it. Press down with your hands to start flattening the dough evenly.
  7. Roll the Dough: Place a second sheet of baking paper on top of the dough and roll out with a rolling pin until the dough is evenly spread approximately 5mm thick across the baking tray.
  8. Score Crackers: Using a pizza roller or a knife, score the dough into cracker-sized shapes to make breaking or cutting easier after baking.
  9. Bake: Bake the scored dough in a preheated oven at 180°C (360°F) for 40-50 minutes until the crackers turn golden and crisp.
  10. Cool: Remove the baking tray from the oven and allow the crackers to cool completely on the tray before breaking them apart and serving.
