  • 6 medium carrots, peeled

  • 2 cups (200 g) parmesan cheese, grated, divided (1½ cups and ½ cup)

Instructions

  1. Preheat the oven: Set your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare the carrots: Cut the carrots crosswise into 2-inch sections. Then slice each section in half lengthwise to create even-sized pieces that will cook uniformly.
  3. Mix the seasoning: In a large bowl, combine the olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and chopped fresh rosemary. Stir to blend all the flavors together.
  4. Coat the carrots: Add the carrot pieces to the bowl with the seasoning mixture. Toss thoroughly to ensure each piece is evenly coated with the flavorful oil and spices.
  5. Prepare the cheese layer: Sprinkle 1½ cups of grated parmesan cheese evenly over the parchment paper on the baking sheet. This will create a crispy base layer.
  6. Arrange the carrots: Place the coated carrots onto the cheese-covered parchment paper, cut side down. Arrange them tightly in a rectangular pattern to avoid gaps, which helps achieve optimum crispiness.
  7. Add the top cheese layer: Sprinkle the remaining parmesan cheese (½ cup) evenly over the tops of the arranged carrots, adding extra flavor and a crispy crust.
  8. Bake: Place the baking sheet in the preheated oven and bake for 30-35 minutes, or until the carrots are tender when pierced with a knife and the parmesan cheese is golden and crispy.
