Ingredients

Scale

Base Layer

  • 68 English muffins, toasted and halved
  • 8 ounces Canadian bacon or thinly sliced ham

Egg Mixture

  • 8 large eggs
  • 2 cups whole milk
  • Salt, to taste
  • Black pepper, to taste

Topping

  • 1 cup hollandaise sauce (homemade or store-bought)
  • Fresh herbs (chives or parsley), for garnish

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Layer Base Ingredients: Arrange half of the toasted English muffin halves evenly in the baking dish. Top this layer with the Canadian bacon or thinly sliced ham spread evenly.
  3. Mix and Pour Egg Mixture: In a medium bowl, whisk together the eggs, whole milk, salt, and pepper until the mixture is smooth. Pour this egg mixture evenly over the layered muffins and bacon in the dish.
  4. Add Hollandaise and Bake: Drizzle the hollandaise sauce on top of the egg mixture. Place the dish in the oven and bake for 30 to 40 minutes, or until the casserole is fully set and the top is slightly golden.
  5. Rest and Garnish: Remove the casserole from the oven and let it rest for 10 minutes to firm up. Slice into portions and garnish with fresh chopped chives or parsley before serving.

  • This casserole can be prepared the night before; assemble and refrigerate, then bake in the morning.
  • Use gluten-free English muffins to make this recipe gluten-free.
  • Garnish with herbs just before serving to maintain their fresh color and flavor.
