Roasted Garlic

  • 2 heads garlic
  • 1 teaspoon olive oil

Dip Base

  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese (about 1 cup)
  • 1/2 cup grated parmesan cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Garnish and Serving

  • 1 teaspoon fresh chopped parsley
  • Crostini or crackers, for serving

Instructions

  1. Preheat and prepare garlic: Preheat your oven to 400°F (205°C). Remove excess papery skin from the outside of the garlic heads. Slice off about 1/4 inch from the top of each head to expose the garlic cloves.
  2. Roast garlic: Place the garlic heads upright in a foil bowl or wrap in foil to hold shape. Drizzle the exposed cloves with olive oil, then seal the foil. Roast in the oven for 40-50 minutes until garlic is soft and lightly browned. Let cool before handling.
  3. Reduce oven temperature: Lower oven temperature to 350°F (175°C) to prepare for baking the dip.
  4. Prepare the garlic paste: Squeeze the softened garlic cloves out of their skins into a large mixing bowl. Mash the garlic with a fork until it forms a smooth paste.
  5. Mix the dip: Add cream cheese and sour cream to the garlic paste, mixing until fully combined. Stir in shredded mozzarella, half of the parmesan cheese, salt, and pepper until smooth and evenly blended.
  6. Assemble the dip: Spread the mixture evenly in a small baking dish, such as an 8×8 inch square or 8-9 inch pie pan. Sprinkle the remaining parmesan cheese evenly over the top.
  7. Bake the dip: Bake for 25-28 minutes until the center is hot and bubbling and the top is lightly browned. Remove from oven and let cool for 5 minutes.
  8. Garnish and serve: Sprinkle fresh chopped parsley over the warm dip and serve immediately with crostini or crackers for dipping.
