Ingredients

Scale

Vegetables & Herbs

  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • Fresh parsley, for garnish

Oils & Dairy

  • 2 tbsp olive oil
  • 2 tbsp butter
  • ¼ cup Parmesan cheese (optional)

Seasonings

  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 tbsp lemon juice

Instructions

  1. Heat the Skillet: In a large skillet over medium heat, add olive oil and butter. Allow the butter to melt and combine with the oil to create a flavorful base for the vegetables.
  2. Sauté the Veggies: Add cauliflower florets to the skillet and cook for 5-6 minutes, stirring occasionally, until they develop a slight golden color. Then add the sliced mushrooms and continue cooking for an additional 4-5 minutes until both vegetables are tender and browned.
  3. Add Garlic & Seasonings: Stir in minced garlic, smoked paprika, Italian seasoning, salt, and black pepper. Cook for another 2 minutes, stirring frequently, until the garlic becomes fragrant but not burnt, incorporating all the spices well.
  4. Finish & Serve: Drizzle the lemon juice over the skillet mixture and sprinkle Parmesan cheese on top if using. Remove from heat and garnish with fresh parsley. Serve the dish hot as a tasty side or light main course.

Notes

  • You can omit the Parmesan cheese to make this dish vegan; consider using a vegan cheese alternative instead.
  • Use fresh herbs like thyme or rosemary for added flavor variations.
  • For a spicier kick, add red pepper flakes along with the other seasonings.
  • Make sure not to overcrowd the skillet to allow vegetables to brown properly instead of steaming.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
