  • 2 cups mozzarella cheese

Wrapper and Coating

  • 1 package small wonton wrappers
  • 1 egg, beaten (for egg wash)

  • Vegetable oil or frying oil, enough for deep frying about 1 inch deep

Instructions

  1. Prepare the oil and chicken: Heat about 1 inch of frying oil in a skillet or Dutch oven to 350°F (175°C). In a separate skillet, cook the ground chicken and chopped onions over medium heat until fully cooked. Season with salt and pepper, then drain any excess fat.
  2. Combine filling ingredients: In a large bowl, mix the cooked chicken and onions with the chopped spinach, Greek seasoning, feta, and mozzarella cheese. Taste and adjust the salt and pepper seasoning as needed.
  3. Assemble the rolls: Lay one wonton wrapper flat in a diamond shape. Spoon about 1 tablespoon of the chicken and spinach mixture into the center. Fold the left and right corners over the filling, then fold the bottom corner up. Dab a bit of the beaten egg on the top corner to act as glue, then roll tightly upward to seal the roll completely.
  4. Fry the rolls: Carefully place the rolls seam side down in the hot oil. Fry for about 2-3 minutes per side until golden brown and crispy, approximately 5 minutes total. Remove and drain on paper towels to remove excess oil.
