For the Kofta
- 500 grams ground chicken
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil (for grilling)
For the Garlic Yogurt Sauce
- 1 cup plain yogurt
- 2 tablespoons freshly squeezed lemon juice
- Pinch of salt
- Prepare the Kofta Mixture: In a large bowl, combine ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly to ensure all the ingredients are evenly distributed.
- Shape the Koftas: Form the chicken mixture into small oval-shaped patties or koftas, about the size of a small egg.
- Preheat the Grill: Preheat your grill to medium-high heat. Brush the grates with olive oil to prevent sticking.
- Grill the Koftas: Place the koftas on the grill and cook for about 10-12 minutes, turning occasionally to ensure even cooking on all sides until they are cooked through and have a nice char.
- Prepare the Garlic Yogurt Sauce: In a separate bowl, mix plain yogurt, freshly squeezed lemon juice, and a pinch of salt. Stir well to combine and adjust seasoning if necessary.
- Serve: Serve the grilled chicken koftas hot with the garlic yogurt sauce on the side for dipping or drizzling.
Notes
- Make sure the koftas are cooked through and reach an internal temperature of 165°F (74°C) for safe consumption.
- You can add a pinch of chili flakes or cayenne pepper to the kofta mixture if you prefer a spicier flavor.
- If you don’t have a grill, you can also cook the koftas in a grill pan or under the broiler in the oven.
- The garlic yogurt sauce can be prepared in advance and refrigerated for up to 2 days.
- Serving suggestion: pair with warm pita bread, fresh salad, or rice.
