Ingredients

Scale

Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 23 garlic cloves (minced)
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 12 Tbsp sriracha
  • 23 Tb chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (more to kick up the spice)
  • 1 tsp rice vinegar
  • 2 tsp honey

To Serve

  • Rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds

Instructions

  1. Prep Bang Bang Sauce: Add all of the bang bang sauce ingredients (mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey) to a small bowl. Whisk well to combine until smooth. Adjust the flavor by adding more sriracha for extra spice or more honey and sweet chili sauce to mellow it out. Chill the sauce in the refrigerator until ready to serve.
  2. Cook Ground Turkey: Heat a drizzle of sesame oil in a large skillet over medium-high heat until shimmering. Add the ground turkey, breaking it into smaller pieces with a spatula. Cook until the turkey is browned and cooked through, reaching an internal temperature of 165°F, about 6-8 minutes.
  3. Season and Simmer: Reduce heat to medium-low. Add the minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt to the skillet. Stir well to combine. Let the mixture simmer gently for 2-3 minutes, stirring occasionally to blend flavors.
  4. Thicken the Mixture: Sprinkle the cornstarch over the turkey mixture and stir thoroughly to incorporate. This will help thicken the sauce. Cook for an additional 1-2 minutes until the sauce is slightly thickened. Optionally, stir in about 2 tablespoons of the prepared bang bang sauce into the turkey mixture just before serving for added flavor.
  5. Assemble Rice Bowls: In serving bowls, start with a base of cooked rice. Top with an assortment of fresh vegetables such as shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado slices, shredded cabbage, and a scoop of the spiced ground turkey mixture. Drizzle generously with the remaining bang bang sauce. Garnish with sliced green onions and sesame seeds. Serve immediately.

Notes

  • Adjust the spiciness of the bang bang sauce by varying the amount of sriracha.
  • Use low sodium soy sauce to control saltiness in the dish.
  • For a gluten-free option, ensure soy sauce and sweet chili sauce are gluten-free.
  • Leftover turkey mixture can be refrigerated up to 3 days and reheated gently.
  • Serve with brown rice or cauliflower rice for a healthier variation.
