Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2–3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1–2 Tbsp sriracha
- 2–3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt, more or less to taste
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½–1 Tbsp sriracha (adjust to taste)
- 1 tsp rice vinegar
- 2 tsp honey
Bowl Toppings and Assembly

- Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth and well combined. Adjust the balance of spice and sweetness by adding more sriracha for heat or more honey and chili sauce for sweetness. Chill the sauce until you’re ready to serve.
- Cook the Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add the ground turkey, breaking it into small pieces with a spatula. Cook until browned and no longer pink inside, reaching an internal temperature of 165°F.
- Add Seasonings and Simmer: Lower heat to medium-low and stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Allow the mixture to simmer gently for 2-3 minutes, stirring occasionally to combine the flavors.
- Thicken the Mixture: Sprinkle corn starch evenly over the turkey mixture and stir thoroughly to incorporate. This will slightly thicken the sauce coating the turkey. Optionally, stir in about 2 tablespoons of the prepared Bang Bang sauce to infuse extra flavor before removing from heat.
- Assemble the Rice Bowls: In serving bowls, layer cooked rice and your choice of shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and other desired vegetables. Spoon the warm ground turkey mixture over the rice and vegetables. Drizzle with additional Bang Bang sauce, and garnish with sliced green onions and sesame seeds for extra color and crunch.
