Instructions

  1. Preheat Oven: Set the oven to 400 degrees Fahrenheit to prepare for baking the sweet potatoes.
  2. Prepare Sweet Potatoes: Peel and chop the sweet potatoes into bite-sized pieces. Place them in a large baking dish and toss with 2 tablespoons of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper to evenly coat.
  3. Bake Sweet Potatoes: Place the baking dish with sweet potatoes in the oven and bake for 30 minutes until they begin to soften.
  4. Cook Ground Turkey: While the sweet potatoes bake, heat 1 tablespoon of olive oil in a pan over medium heat. Add the ground turkey, seasoning it with 1 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper. Cook until browned and fully cooked through, stirring occasionally.
  5. Prep Zucchini: Chop the zucchini into slices and then quarter those slices to create smaller pieces ready for baking.
  6. Combine Ingredients: Remove the partially baked sweet potatoes from the oven. Add the cooked ground turkey and chopped zucchini into the baking dish and mix them together evenly.
  7. Second Bake: Return the combined mixture to the oven and bake for an additional 10 minutes to meld the flavors and soften the zucchini.
