Instructions

  1. Heat oil and sauté aromatics: Heat the avocado oil in a large pot over medium-high heat. Add the chopped onion and cook, stirring occasionally, until it begins to brown, about 5 minutes. Then add the chopped celery, bell peppers, and garlic, cooking for an additional 5 minutes until softened and fragrant.
  2. Cook the ground beef: Add the lean ground beef to the pot. Cook it while stirring occasionally until the meat is no longer pink, approximately 5 minutes.
  3. Add spices and liquids: Stir in the chili powder, paprika, cumin, coriander, oregano, sea salt, black pepper, and the cinnamon stick. Pour in the crushed tomatoes and Guinness beer. Stir everything together well to combine.
  4. Simmer the chili: Reduce the heat to medium-low and let the chili cook uncovered for 30 minutes. This allows the flavors to meld together and the chili to thicken nicely.
