Fig Bars
- ¾ cup raw hazelnuts (105g)
- ⅓ cup raw pumpkin seeds (50g)
- 1 cup chopped dried Turkish figs (150g)
- 1 Tbsp coconut oil (room temperature)
- Pinch of salt
- 1 Tbsp water
Chocolate Coating
- ¾ cup dark chocolate (4.5oz / approx. 130g)
- 2 tsp coconut oil
- Flaked sea salt (optional)
- Prepare Pan: Line an 8″ x 8″ baking pan with foil or parchment paper and set aside to make removing the bars easier after setting.
- Blend Ingredients: Combine the raw hazelnuts, raw pumpkin seeds, chopped dried Turkish figs, 1 tablespoon coconut oil, and a pinch of salt in a food processor. Blend for 1 minute until the mixture starts to come together.
- Add Water: Add 1 tablespoon of water to the mixture and continue blending until the dough begins to clump and holds together well.
- Press Dough: Firmly press the dough evenly into the prepared pan, ensuring a compact and level surface.
- Freeze Bars: Place the pan in the freezer for at least 1 hour to allow the bars to set and firm up.
- Cut Bars: Remove the set dough from the freezer and lift it out using the foil or parchment. Cut into 16 even pieces for uniform bars.
- Melt Chocolate Coating: In a small saucepan over low heat, melt ¾ cup dark chocolate with 2 teaspoons coconut oil. Stir frequently to avoid burning until the chocolate is fully melted and smooth.
- Dip Fig Bars: Dip each fig bar into the melted chocolate to coat, then place them on a sheet of parchment paper to dry and set.
- Decorate and Store: Drizzle any remaining melted chocolate over the coated bars and sprinkle with flaked sea salt, if desired. Store the finished bars in the refrigerator or freezer to maintain firmness and freshness.
Notes
- You can substitute the raw hazelnuts and pumpkin seeds with other nuts or seeds, such as almonds and sunflower seeds, depending on your preference.
- Ensure the dried figs are soft for easier blending; if they are very dry, soak them in warm water for 10 minutes and then drain.
- The bars keep best when stored in the fridge or freezer; they can get sticky if left at room temperature for too long.
- Use high-quality dark chocolate with at least 70% cocoa content for a richer flavor and added antioxidants.
