Ingredients

Scale

For the Batter

  • 1 cup All-purpose flour (Gluten-free flour can be used)
  • 1/4 cup Granulated sugar (Coconut sugar can be used for a less refined option)
  • 1 tablespoon Baking powder (Avoid substituting directly with baking soda)
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg (Can substitute with a flax egg for vegan option)
  • 1/2 cup Milk (Dairy-free milk can be used)

For the Pineapple

  • 1 whole Fresh pineapple, sliced into 1/2-inch thick rings

For Frying

  • 2 cups Vegetable oil (Canola or coconut oil can be used)

For Dusting

  • 1 tablespoon Additional cinnamon and sugar mixture (adjust to liking)

Instructions

  1. Prepare the Pineapple: Slice your fresh pineapple into 1/2-inch thick rings to ensure even cooking and a steady surface for battering. Place the slices on a plate and set aside.
  2. Make the Batter: In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Create a well in the center and add the egg and milk, stirring gently until you achieve a smooth batter with no lumps.
  3. Heat the Oil: In a deep fryer or large pot, pour in vegetable oil and heat it until it reaches 375°F (190°C). Using a thermometer ensures accurate temperature for perfect frying.
  4. Batter the Pineapple Rings: Dip each pineapple ring into the batter, making sure it is fully coated. Allow any excess batter to drip off to avoid clumping in the oil.
  5. Fry the Fritters: Carefully place the battered pineapple rings into the hot oil in batches. Fry each side for about 2 minutes or until they turn golden brown and crispy.
  6. Drain and Dust: Remove the cooked fritters with a slotted spoon and let them drain on paper towels to remove excess oil. While warm, dust them evenly with the cinnamon and sugar mixture for added sweetness and spice.
  7. Serve: Plate the pineapple fritters warm. Optionally, serve with a scoop of coconut ice cream for a refreshing tropical dessert experience.
