Ingredients

Scale

Chicken and Sauce

  • 1 lb chicken breast (cut into 1” pieces)
  • 3 tbsp olive oil (divided)
  • ½ tsp salt (divided)
  • ½ tsp pepper (divided)
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • ½ cup honey
  • ½ cup Texas Pete hot sauce
  • ½ tsp red pepper flakes

Vegetables and Garnish

  • 1 head broccoli (cut into florets)
  • 1 ½ cup shredded purple cabbage
  • Cooked rice (for serving)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper to prepare for roasting the broccoli.
  2. Make Sauce: In a large bowl, whisk together garlic powder, paprika, onion powder, red pepper flakes, honey, hot sauce, and ¼ teaspoon each of salt and pepper. This flavorful sauce will marinate the chicken and serve as a finishing drizzle.
  3. Marinate Chicken: Pour out half of the sauce into a separate small bowl for later use. Add the chicken pieces to the remaining sauce in the large bowl and toss well to coat. Let the chicken marinate for about 15 minutes while you prep other ingredients.
  4. Prepare and Roast Broccoli: Toss broccoli florets with 1 tablespoon olive oil and the remaining ¼ teaspoon salt and pepper. Spread the broccoli evenly on the prepared baking sheet. Roast in the oven for 15–20 minutes until tender and lightly charred around the edges.
  5. Cook Chicken: While broccoli roasts, heat a skillet over medium-high heat and add 2 tablespoons olive oil. Add the marinated chicken and cook for 5–7 minutes, stirring occasionally until the chicken pieces are golden and cooked through.
  6. Glaze Chicken: Brush or toss the cooked chicken with the reserved hot honey sauce from earlier to give it a glossy, sticky finish full of flavor.
  7. Assemble Bowls: To serve, layer cooked rice, shredded purple cabbage, roasted broccoli, and the hot honey chicken in bowls.
  8. Garnish and Serve: Garnish with fresh parsley and drizzle any extra hot honey sauce on top if desired for added flavor and moisture.

Notes

  • For spicier bowls, increase the red pepper flakes or amount of hot sauce to taste.
  • Cook rice according to package instructions just before assembling bowls.
  • Use any hot sauce of choice if Texas Pete is unavailable.
  • Chicken thighs can be used instead of breast for juicier texture.
  • Leftover sauce tastes great drizzled on salads or roasted vegetables.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
  • Can be meal-prepped by cooking chicken and vegetables in advance and assembling bowls when ready to eat.
