Chili Sauce

  • 1 pound ground chuck
  • 1 (14.5 ounce) can petite diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 cup water

  • 8 low carb tortillas or wraps
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and spray a 9×13 inch casserole dish with nonstick cooking spray to prevent sticking.
  2. Make Chili Sauce: In a medium saucepan, brown the ground chuck over medium heat until fully cooked. Add diced tomatoes, water, and all the spices (chili powder, cumin, garlic powder, onion powder, and oregano). Bring the mixture to a boil over medium-high heat, then reduce to medium-low and simmer for 8-10 minutes, stirring occasionally, until the sauce thickens.
  3. Assemble Casserole: Spoon some of the chili sauce into the bottom of the prepared casserole dish to create a base layer. Next, individually roll each hot dog in a low-carb tortilla, placing them seam-side down on top of the chili sauce in the dish.
  4. Add Remaining Sauce and Cheese: Pour the rest of the chili sauce evenly over the rolled hot dogs, then sprinkle the shredded cheddar cheese generously on top of everything.
  5. Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and the casserole is set.
  6. Cool and Serve: Let the casserole cool slightly before serving. Garnish with your favorite keto-friendly toppings such as chopped onions, jalapeños, or sour cream if desired.
