Vegetables and Aromatics

- Sauté the veggies: Heat the olive oil in a large sauté pan over medium-high heat. Add the finely diced onion and diced green bell pepper and cook for about 5 minutes, stirring occasionally, until softened and fragrant.
- Add tomatoes and seasonings: Reduce the heat to medium. Stir in the canned diced tomatoes along with their juices, then add the butter, Aleppo pepper, a generous pinch of fine sea salt, and freshly-cracked black pepper. Mix well and continue cooking for 2 more minutes until the tomatoes are heated through and well combined with the vegetables.
- Add the eggs: Crack the eggs directly over the tomato mixture. Allow them to cook undisturbed for about 1 minute, then gently break the yolks with a spoon. Stir the eggs into the tomato mixture partially, keeping some swirls of egg visible. Continue to cook for 2-3 more minutes or until the eggs are just set but still soft and creamy, the traditional texture of menemen.
- Serve: Remove from heat and serve the menemen immediately, garnished as desired with sliced chives, chopped parsley, crumbled feta, or sliced avocado. Pair with crusty sliced bread for dipping and enjoying every bite.
