Ingredients

Scale

Cheese and Bacon Filling

  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits

Cream Cheese Mixture

  • 8 oz cream cheese, softened
  • 4 jalapeños, seeded and diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Assembly and Frying

  • 12 egg roll wrappers
  • Vegetable oil, for frying

Instructions

  1. Prepare the Filling: In a medium bowl, combine shredded cheddar cheese and bacon bits thoroughly. In another bowl, mix softened cream cheese with diced jalapeños, garlic powder, onion powder, salt, and black pepper until smooth and well blended.
  2. Assemble the Egg Rolls: Place an egg roll wrapper on a flat surface in a diamond position. Spoon about 1 tablespoon of the cheddar and bacon mixture into the center, then add 1 tablespoon of the cream cheese mixture on top. Wet the edges of the wrapper with water, fold the bottom corner over the filling, fold in the sides, and roll it tightly into a cylinder. Repeat with remaining wrappers and fillings.
  3. Fry the Egg Rolls: Heat 1-2 inches of vegetable oil in a large skillet over medium-high heat until it reaches 350°F. Carefully add a few egg rolls without overcrowding. Fry them for 2-3 minutes on each side, or until golden brown and crispy. Remove with tongs and drain on paper towels to remove excess oil.
  4. Serve: Serve the jalapeño popper egg rolls hot alongside ranch dressing or your preferred dipping sauce for an irresistible appetizer or snack.

Notes

  • Adjust the number of jalapeños or keep seeds for extra heat if you prefer it spicier.
  • Use turkey bacon or vegetarian bacon alternatives to modify the recipe for different dietary preferences.
  • Ensure the oil temperature is correct to achieve crispiness without absorbing too much oil.
  • These egg rolls can be baked at 400°F for about 15-20 minutes as a healthier alternative to frying.
  • Serve immediately after frying to enjoy maximum crunchiness.
