Wet Ingredients
- 1 cup zucchini (finely shredded)
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup plain Greek yogurt
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
Cinnamon Swirl
- 1/2 cup granulated sugar
- 1 Tablespoon cinnamon
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and secure it with binder clips to prevent shifting during baking.
- Mix Wet Ingredients: In a large mixing bowl, combine the finely shredded zucchini, eggs, vegetable oil, plain Greek yogurt, and vanilla extract. Mix thoroughly to blend all wet ingredients evenly.
- Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, granulated sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add these dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix to avoid large air bubbles in the bread.
- Prepare Cinnamon Swirl: In a small bowl, mix together 1/2 cup granulated sugar and 1 tablespoon cinnamon to create the cinnamon sugar swirl.
- Layer Batter and Cinnamon Sugar: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over the batter. Next, pour the remaining batter over the cinnamon sugar, spreading it evenly to the edges. Finally, sprinkle the remaining cinnamon sugar on top.
- Create the Swirl Effect: Using a knife, gently run it up and down and side to side through the batter and cinnamon sugar layers to create a beautiful swirl pattern throughout the bread.
- Bake the Bread: Bake the loaf in the preheated oven for 60 to 65 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean without crumbs.
- Cool and Serve: Allow the bread to cool in the pan for 10 to 15 minutes. Then carefully remove from the pan, slice, and serve. Store any leftovers in an airtight container at room temperature.
Notes
- Do not overmix the batter to prevent a tough texture and large air bubbles.
- If your zucchini is very watery, squeeze out excess moisture before measuring for the best results.
- You can substitute plain Greek yogurt with sour cream or buttermilk if preferred.
- Adjust the cinnamon sugar swirl quantity to your taste for more or less sweetness and spice.
- This bread keeps well at room temperature for up to 3 days or can be frozen for up to 2 months.
