Ingredients

Scale

Base Mixture

  • 1 cup pecans
  • 1 cup pitted dates, soaked
  • 2 tbsp coconut sugar or monk fruit sweetener
  • Pinch of sea salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)

Chocolate Coating

  • 1 1/4 cup chocolate chips

Garnish

  • Whole pecans for topping

Instructions

  1. Prepare the Dough: Add pecans, soaked dates, coconut sugar or monk fruit, sea salt, vanilla extract, and optional cinnamon into a food processor. Blend until a sticky dough forms, scraping down the sides occasionally to ensure even mixing. This may take a few minutes to achieve the right consistency.
  2. Shape the Bites: Roll the sticky mixture into small balls and place them on a lined cookie sheet. Flatten each ball slightly with the palm of your hand. Place the cookie sheet in the freezer for about 15 minutes to allow the bites to firm up.
  3. Melt the Chocolate: Gently melt the chocolate chips until smooth, either in a microwave in short bursts or using a double boiler to prevent burning.
  4. Coat the Bites: Dip each chilled bite into the melted chocolate, ensuring an even coating. Return the coated bites to the cookie sheet, then place a whole pecan on top of each for garnish.
  5. Set the Chocolate: Place the cookie sheet back in the freezer and allow the chocolate to harden completely, which should take around 10-15 minutes. Once firm, the bites are ready to serve or store in an airtight container in the refrigerator or freezer.

Notes

  • Soaking the dates softens them and makes blending easier; soak in warm water for about 10 minutes if your dates are hard.
  • Cinnamon is optional but adds a warm, spiced flavor complementing the pecans.
  • For a richer chocolate coating, use dark chocolate chips with at least 70% cocoa content.
  • Store the bites in the freezer for longer shelf life or in the refrigerator if you prefer them softer.
  • These bites are naturally sweetened with dates and coconut sugar or monk fruit, making them a healthier alternative to traditional pecan pie.
