Instructions

  1. Prepare the Dish: Line a 9×9 square dish with parchment paper, ensuring some paper hangs over the edges for easy brownie removal later.
  2. Make Brownie Base: In a food processor, combine almond flour, walnuts, cocoa powder, vanilla extract, and salt. Pulse until walnuts reach a flour-like consistency. Add pitted medjool dates and blend again until a sticky dough forms. Press this dough firmly and evenly into the bottom of the prepared dish.
  3. Make Chocolate Ganache: In a microwave-safe bowl, combine chocolate chips, maple syrup, and vanilla extract. In a separate bowl, scoop out all the contents of canned coconut cream (both thick cream and liquid). Microwave the coconut cream for 1 minute 45 seconds, then whisk until smooth. Pour 2/3 cup of the warmed coconut cream over the chocolate mixture and let sit for 1-2 minutes. Whisk until smooth, microwaving for an additional 15-30 seconds if needed to fully melt the chips.
  4. Assemble Brownies: Pour the chocolate ganache over the brownie base and spread it evenly. Tap the dish gently on the counter to smooth out the ganache. Sprinkle rainbow candy-coated chips on top for a colorful finish.
  5. Chill: Refrigerate the brownies for at least 4 hours or until the ganache is fully set.
