Ingredients

Scale

Wet Ingredients

  • 3 extremely ripe (even brown) bananas, mashed
  • 6 tablespoons butter, melted
  • 2 eggs, room temperature
  • 3/4 cup nonfat Greek yogurt
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour (can substitute 1/2 cup with whole wheat flour)
  • 1 teaspoon baking soda
  • 3/4 cup sugar
  • 1 teaspoon salt

Add-ins

  • 2/3 cup Nutella

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 350ºF (175ºC). Spray either 6 giant or 12 regular muffin cups with cooking spray, then place them in a muffin tin.
  2. Mix wet ingredients: In a large bowl, combine the mashed bananas and melted butter, stirring until well incorporated. Add the eggs, nonfat Greek yogurt, and vanilla extract, mixing thoroughly. Set this wet mixture aside.
  3. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, sugar, and salt. Gradually fold the dry ingredients into the banana mixture, being careful not to overmix.
  4. Prepare Nutella swirl: Melt Nutella in the microwave for about 20 seconds until it is easily pourable.
  5. Fill muffin cups: Evenly distribute the batter into the prepared muffin cups. Drizzle the melted Nutella over the tops of the batter in each cup, then use a knife to gently swirl the Nutella through the batter creating marbled patterns.
  6. Bake the muffins: Bake giant muffins for 20-25 minutes or regular-sized muffins for 15-20 minutes. Use a knife inserted into the center of a muffin to check doneness; it should come out clean when done.
  7. Cool and serve: Remove the muffins from the oven and allow them to cool for about 15 minutes before serving to enjoy the perfect texture and flavor.

Notes

  • Bananas should be very ripe for maximum sweetness and moisture.
  • You can substitute half a cup of all-purpose flour with whole wheat flour for a healthier option.
  • Ensure eggs are at room temperature to help with batter consistency.
  • Do not overmix the batter to keep muffins tender and fluffy.
  • Muffins can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • For a dairy-free option, substitute yogurt and butter with plant-based alternatives.
