For the Marinade

  • ⅓ cup fresh cranberries

  • ¼ cup dry white wine (or chicken broth)

For the Chicken

  • 6 medium bone-in, skin-on chicken thighs (approximately 3 pounds)
  • 1 tablespoon olive oil (or avocado oil)
  • Salt, to taste

For Garnish and Baking

  • ½ cup fresh cranberries
  • 4 sprigs fresh rosemary
  • 1 tablespoon maple syrup
  • Sprigs of fresh rosemary (for garnish, optional)

Instructions

  1. Prepare the Cranberry Rosemary Marinade: Add ⅓ cup fresh cranberries, 2 tablespoons olive oil, 2 tablespoons coconut aminos, 2 tablespoons maple syrup, 3 cloves garlic, 1 teaspoon fresh rosemary leaves, and ¼ cup dry white wine into a food processor or blender. Blend or pulse until the mixture is smooth and fully combined.
  2. Marinate the Chicken Thighs: Place 6 bone-in, skin-on chicken thighs skin-side up in a single layer inside a baking dish. Pour the prepared marinade evenly over the chicken, making sure to coat thoroughly. Cover the dish tightly with a lid or plastic wrap and refrigerate for at least 30 minutes, up to 24 hours for deeper flavor.
  3. Bring to Room Temperature: Remove the baking dish from the refrigerator and let it stand, covered, at room temperature for about 30 minutes before cooking.
  4. Preheat and Prepare for Baking: Towards the end of the 30-minute resting time, preheat your oven to 375º Fahrenheit. Uncover the baking dish and carefully spoon the marinade off the tops of the chicken thighs into the dish without removing the skin. Brush the tops of the chicken thighs with 1 tablespoon olive oil and season generously with salt. Scatter ½ cup fresh cranberries and 4 sprigs of rosemary around the chicken in the dish.
  5. Bake the Chicken: Place the baking dish in the preheated oven and bake uncovered for 20 minutes. After 20 minutes, check the chicken’s internal temperature with a meat thermometer. Continue baking and checking every few minutes until the chicken reaches 160º Fahrenheit.
  6. Prepare for Broiling: Remove the chicken from the oven once it reaches 160º Fahrenheit. Preheat the broiler to high. Remove rosemary sprigs from the baking dish and discard them. Brush 1 tablespoon maple syrup evenly over the tops of the chicken thighs.
  7. Broil the Chicken: Place the baking dish under the broiler and broil the chicken thighs until the skin is crispy and nicely browned but not burnt. Watch closely to prevent burning.
  8. Finish and Rest: After broiling, remove the dish from the oven and immediately spoon the cranberries and marinade over the chicken thighs, covering them completely. Let the chicken rest for 3 to 5 minutes, allowing the internal temperature to reach at least 165º Fahrenheit for safe eating.
  9. Serve: Transfer the rested chicken thighs to serving plates. Spoon additional cranberry mixture from the pan over the top and garnish with fresh rosemary sprigs if desired. Serve immediately while warm and juicy.
