Ingredients

Scale

Oreo Crust

  • 15 Oreo cookies (not double stuffed)
  • 3 tablespoons unsalted butter (42 grams), melted

Peanut Butter Layer

  • 1/4 cup unsalted butter (56 grams), softened
  • 3 tablespoons brown sugar (light or dark)
  • 1/4 teaspoon salt (omit if using salted butter)
  • 1 cup smooth peanut butter
  • 1 2/3 cup powdered sugar (183 grams), sifted

Chocolate Layer

  • 6 ounces semi-sweet chocolate (170 grams) (or preferred variety)
  • 2 teaspoons shortening (or 1/2 teaspoon vegetable oil)

Instructions

  1. Prep the Pan: Line an 8×8 inch (20×20 cm) pan with parchment paper or aluminum foil, leaving an overhang around the sides for easy removal later.
  2. Make Oreo Crust: Crush the Oreo cookies including wafers and filling using a food processor until fine crumbs form. Alternatively, place cookies in a freezer bag and crush with a rolling pin. Mix these crumbs with the melted butter and press the mixture evenly into the bottom of the prepared pan.
  3. Create Peanut Butter Layer: Beat softened butter and brown sugar together until smooth. Add peanut butter and salt, beating until no lumps remain. Gradually mix in the sifted powdered sugar about 1/2 cup at a time; the mixture should be thick and not sticky to the touch. Spoon and press this peanut butter mixture evenly over the Oreo crust, using wax paper if desired to smooth out the surface.
  4. Prepare Chocolate Layer: Finely chop the chocolate and place it in a heatproof bowl. Microwave at medium power for 45 seconds intervals, stirring between each, until fully melted. Alternatively, melt the chocolate in a double boiler over low heat. Stir in the shortening to achieve a smooth, glossy finish.
  5. Assemble Bars: Pour the melted chocolate over the peanut butter layer and smooth into an even top layer. Let the chocolate harden either at room temperature or in the refrigerator. Note that refrigeration may cause chocolate discoloration.
  6. Slice and Serve: When the chocolate is about 90% set, score the top where you plan to cut for easier slicing. Once fully hardened, lift the bars out using the parchment overhang and cut into desired portions with a sharp, thin knife.

Notes

  • Using softened butter for the peanut butter layer ensures better mixing and smoother texture.
  • If unavailable, vegetable oil can be used in place of shortening for the chocolate topping.
  • Letting the chocolate layer harden at room temperature preserves its glossy appearance better than refrigeration.
  • Scoring the chocolate before it fully hardens helps achieve cleaner cuts.
  • Store bars in an airtight container at room temperature or refrigerated for longer freshness.
