Instructions

  1. Prepare the pan: Line a 9×9 inch pan with foil or parchment paper and grease it with butter or nonstick cooking spray to prevent sticking.
  2. Mix protein and milk: In a small bowl, whisk together the milk and vanilla protein powder until smooth and well combined. Set aside for use later.
  3. Melt butter: Place a large pot or stock pot over medium heat and add the salted butter. Allow it to melt completely.
  4. Melt marshmallows and combine: Reduce heat to low, add the mini marshmallows to the melted butter, stirring continuously until the marshmallows are fully melted and smooth. Then stir in the vanilla extract and the milk-protein mixture until fully incorporated.
  5. Add cereal: Remove the pot from heat and quickly stir in the Rice Krispies cereal, gently mixing until the cereal is evenly coated with the marshmallow mixture.
  6. Transfer to pan: Pour the mixture into the prepared pan and gently press it down evenly. Be careful not to press too firmly to keep the bars soft and chewy. Optionally, sprinkle with desired sprinkles on top.
