Ingredients

Scale

Wet Ingredients

  • 3 large eggs
  • 3/4 cup milk
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon light brown sugar
  • 1 1/2 teaspoons vanilla extract

Spices

  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice

Others

  • Butter (for griddle or pan)
  • 10 slices brioche bread (or your favorite bread)
  • Maple syrup (for serving)
  • Butter (for serving)
  • Powdered sugar (for serving)

Instructions

  1. Preheat griddle: Preheat your electric griddle and set it aside to ensure it’s warm and ready for cooking.
  2. Make custard mixture: In a 9×13 pan or large mixing bowl, whisk together the eggs, milk, pumpkin puree, light brown sugar, vanilla extract, ground cinnamon, and pumpkin pie spice until fully combined.
  3. Prepare griddle: Butter the surface of the preheated griddle to prevent sticking and add flavor.
  4. Dip and cook bread: Dip each slice of brioche bread on both sides into the pumpkin-egg mixture, allowing it to soak slightly. Transfer the coated bread slices carefully onto the griddle. Cook until the underside is golden brown, about 3 to 4 minutes, then flip and cook the other side until also golden brown. Repeat this process with all slices until the mixture is used up.
  5. Serve: Serve the warm Pumpkin French Toast topped with maple syrup, additional butter, and a dusting of powdered sugar if desired.
  6. Storage and tips: Pumpkin French Toast is best enjoyed the same day fresh and warm. However, leftovers can be refrigerated for up to 3 days or frozen for up to 2 months. Reheat in the toaster or microwave before serving.

Notes

  • Using a 9×13 pan for the egg mixture makes dipping the bread easier due to its shallow depth.
  • If you don’t have an electric griddle, a non-stick skillet over medium heat works well as a substitute.
  • Brioche bread adds a rich texture, but any sturdy bread will work.
  • Do not use pumpkin pie filling as it contains added sugars and spices that can alter the taste.
  • French toast is best served fresh but can be stored safely in the fridge or freezer as noted.
