Ingredients

Scale

For the Crust:

  • 1 package of puff pastry (about 17 oz), thawed
  • 1 tablespoon granulated sugar (for sprinkling)

For the Filling:

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup fresh raspberries (or raspberry jam if preferred)
  • 1 tablespoon lemon juice (optional, to enhance flavor)

For Garnish (Optional):

  • Powdered sugar for dusting
  • Extra fresh raspberries for serving

Instructions

  1. Prepare the Puff Pastry: Preheat your oven to 375°F (190°C). Lightly flour a work surface and roll out the thawed puff pastry to about ¼-inch thickness. Cut the pastry into 24 squares, each approximately 2 inches by 2 inches. Arrange the squares on a parchment-lined baking sheet, leaving space between each.
  2. Prepare the Cream Cheese Filling: In a medium-sized bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. If using, add the tablespoon of lemon juice to brighten the flavor and mix well.
  3. Top with Raspberries: Spoon about 1 teaspoon of the cream cheese mixture into the center of each puff pastry square. Place 1 to 2 fresh raspberries on top of the cream cheese filling.
  4. Assemble and Bake: If preferred, fold the corners of the pastry squares over the filling to create a sealed pocket; otherwise, leave the squares open-faced. Lightly sprinkle the edges of each pastry with granulated sugar for added sweetness and crunch. Bake in the preheated oven for 25 to 30 minutes, or until the pastry is golden brown and puffed.
  5. Serve and Garnish: Allow the bites to cool slightly before dusting them with powdered sugar. Garnish with extra fresh raspberries if desired. Serve warm or at room temperature for best flavor and texture.

Notes

  • Using fresh raspberries gives a bright, tart flavor, but raspberry jam can be substituted if fresh are unavailable.
  • The lemon juice is optional but helps enhance the overall flavor profile.
  • For a sealed pocket, gently fold and press the corners of the puff pastry squares to encase the filling.
  • Make sure the cream cheese is softened to easily mix the filling ingredients smoothly.
  • Store any leftovers in the refrigerator and reheat briefly in the oven to restore flakiness.
