Ingredients

Scale

Mushrooms and Base

  • 16 even-sized open cup mushrooms, stalks cut level
  • 3 tbsp olive or vegetable oil
  • salt and freshly ground black pepper to taste

Garlic Butter Mixture

  • 3 tbsp unsalted butter, softened
  • 2 cloves garlic, chopped very finely
  • 2 tbsp fresh thyme, chopped
  • 1½ tbsp lemon juice
  • ½ tsp garlic powder

Topping

  • 5 tbsp fresh breadcrumbs

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to roast the mushrooms to golden perfection.
  2. Fry Mushrooms: Heat the olive or vegetable oil in a pan over medium-high heat and lightly fry the mushrooms cap-side down for 2-3 minutes. This step enhances their flavor and gives a nice sear.
  3. Arrange Mushrooms: Place the mushrooms in a 9×13 inch rectangular oven-proof dish or similar, with the stalks facing upwards to create a space for the filling.
  4. Prepare Garlic Butter Mixture: In a small bowl, combine the softened unsalted butter with finely chopped garlic, fresh thyme, lemon juice, and garlic powder. Season with salt and black pepper to taste. Mix until well combined.
  5. Fill Mushrooms: Spoon a small amount of the garlic butter mixture onto each mushroom stalk cavity, making sure to spread it evenly inside.
  6. Add Breadcrumbs: Lightly press fresh breadcrumbs on top of each buttered mushroom to create a crispy crust during roasting.
  7. Bake: Place the dish in the preheated oven and bake for 15 minutes or until the topping turns golden brown and the mushrooms are tender.
  8. Serve: Optionally, serve immediately while hot or refrigerate for later use. Reheat before serving to enjoy the best flavor and texture.

Notes

  • Use even-sized mushrooms for uniform cooking.
  • Softened butter is key for easy mixing and spreading.
  • Fresh thyme can be substituted with dried thyme, reducing the quantity to 1 tsp.
  • For a richer flavor, add a sprinkle of grated Parmesan before adding breadcrumbs.
  • Leftovers can be refrigerated for up to 2 days and reheated in the oven to maintain crispiness.
