Mushrooms and Base
- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp olive or vegetable oil

Garlic Butter Mixture
- 3 tbsp unsalted butter, softened
- 2 cloves garlic, chopped very finely
- 2 tbsp fresh thyme, chopped
- 1½ tbsp lemon juice
- ½ tsp garlic powder
Topping
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough to roast the mushrooms to golden perfection.
- Fry Mushrooms: Heat the olive or vegetable oil in a pan over medium-high heat and lightly fry the mushrooms cap-side down for 2-3 minutes. This step enhances their flavor and gives a nice sear.
- Arrange Mushrooms: Place the mushrooms in a 9×13 inch rectangular oven-proof dish or similar, with the stalks facing upwards to create a space for the filling.
- Prepare Garlic Butter Mixture: In a small bowl, combine the softened unsalted butter with finely chopped garlic, fresh thyme, lemon juice, and garlic powder. Season with salt and black pepper to taste. Mix until well combined.
- Fill Mushrooms: Spoon a small amount of the garlic butter mixture onto each mushroom stalk cavity, making sure to spread it evenly inside.
- Add Breadcrumbs: Lightly press fresh breadcrumbs on top of each buttered mushroom to create a crispy crust during roasting.
