Ingredients

Scale

Pineapple and Rum Soak

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum

Breading

  • 1 ½ cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk

Frying

  • Vegetable oil for frying

Dipping Sauce

  • 4 oz cream cheese, softened
  • ½ cup powdered sugar
  • Reserved rum from soaking

Instructions

  1. Soak the Pineapple: Place the pineapple rings in a shallow dish and cover with the dark rum and coconut rum. Let them soak for at least 1 hour to absorb the flavors. After soaking, drain the pineapple rings well and pat them dry with paper towels to ensure the coating sticks properly.
  2. Prepare Breading Stations: Set up three shallow bowls. Fill one with the all-purpose flour, another with the sweetened coconut flakes, and whisk together eggs and coconut milk in the third bowl to create an egg wash mixture.
  3. Coat the Pineapple Rings: Dip each pineapple ring first into the flour to dust, then into the egg and coconut milk mixture to moisten, and finally press into the coconut flakes so they are evenly coated with the crispy outer layer.
  4. Fry the Pineapple Rings: Heat vegetable oil in a deep pot or deep fryer to 350°F (175°C). Carefully place the coated pineapple rings into the hot oil and fry for about 1 minute on each side, or until golden brown and crispy. Remove them using a slotted spoon and drain on paper towels to remove excess oil.
  5. Make the Dipping Sauce: In a small bowl, combine the softened cream cheese with powdered sugar and a few tablespoons of the reserved rum (from the soaking step) until smooth and creamy. Adjust rum quantity to taste to balance sweetness and booziness.
  6. Serve: Plate the fried pineapple rings and serve warm with the rum cream cheese dipping sauce on the side for dipping.

Notes

  • Soaking time can be extended up to 3 hours for stronger rum flavor.
  • Use a deep pot with a thermometer to maintain consistent oil temperature for even frying and crispiness.
  • To make it less boozy, drain the pineapple thoroughly and reduce the amount of rum in the dipping sauce.
  • Sweetened coconut flakes add extra sweetness; unsweetened can be used but may alter the flavor balance.
  • The dipping sauce can be whipped for a lighter texture before serving.
