Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) and grease a 9×13 inch baking pan to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, combine the finely grated zucchini, brown sugar, unsweetened applesauce, eggs, and vanilla extract. Stir until the mixture is well blended.
  3. Combine Dry Ingredients: In a separate bowl, mix together oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt to ensure even distribution of leavening agents and spices.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined to avoid overmixing which can toughen the brownies.
  5. Add Optional Mix-ins: Fold in chocolate chips and/or nuts if you desire some added texture and flavor.
